Organoleptic Characteristics
This wine is particularly noted for its intense fruity and deep bouquet as well the oak character from the barrels. It has a slightly golden reflection, with a rich taste and a full bodied, well balanced with a distinct and long after taste.
The Malagouzia and Savatiano grapes used in making this wine are grown on our estate in Pallini, along the south-eastern slopes of Athens. The production is limited to only 1500 bottles annually and matures slowly in oak barrels in order to bring forth a rich body and complex aroma that withstands ageing and should be complimented with an equally superb meal.
TECHNICAL PROPERTIES
The grapes are destemmed and directed to the stainless steel tank where they are cooled down to a temperature of 15°C. There they remain for approximately 12 hours so as to ensure the desired extraction of the aromas from the skin of the grapes to the must. The grapes are then pressed and the must is directed to another tank where the winemaking process takes place in the same way as for Savatiano.

Food
It superbly accompanies white meat, cold dishes and sweets. Best served at 10-12°C
