Organoleptic Characteristics
A bright, clear colour with yellow-green highlights, with aromas of roses, lemon blossom, and apples and pears. The high acidity provides a good balance with the body of this wine. These are the main characteristics of the Moschofilero variety, which are exemplified in this wine.
It is produced from the famous red grape variety, Moschofilero of Mantinia, which following a specific process is vinified into white wine. It has a delicate aroma of acacia and roses and a slightly accentuated acid taste which are the main characteristics of wines coming from the Mantinia area. Our grapes are gathered from the slopes of Mantinia and are vinified using the best technological methods. Four months after the vinification the wine is bottled in limited quantities and is offered to the consumers one month later.
TECHNICAL PROPERTIES
Selected grapes are destemmed and directed to a pneumatic press where only the juice from the first pressing is used – the must is taken with a crushing pressure of 0,2 bar. The must is then cooled to 10°C and the remaining sediments are allowed to settle over a period of 24 hours. Afterwards the clarified must is directed to stainless steel tanks where the fermentation takes place with the addition of special dry yeasts at a maximum temperature of 10°C. When the fermentation is completed the wine is clarified with the use of bentonite and is then placed in storage tanks. The clarified wine is cooled to -4°C to obtain the stabilization of the tartaric acid and then filtered using paper filters of 0.45 microns in diameter before being bottled.

Goes well with fish, seafood, and all white meat dishes. Best served at 8°-10°C.
Presentation
Bottle - 750ml bordelais style
Closure - Plastic stopper: from the beginning of 2004 special plastic stoppers have been used instead of natural corks thus avoiding the problem of unpleasant odours. The plastic stoppers ensure freshness of the wines that do not require aging.
Case – cardboard carton of 12 bottles
Ageing
Not recommended for this wine. The wine is best consumed within a year of its production.
