The Wine Cellar

In our wine cellar we keep wine in oak barrels for ageing under ideal temperature conditions over one or two years depending on the type of wine. Oak is considered the noblest wood and the most suitable one for this purpose, as it contributes in a variety of ways to the improvement of a wine’s quality.

First of all, small quantities of oxygen seep gradually through the wood’s pores into the wine, imparting stability. At the same time, as the wood comes into contact with the stored liquid, it releases aromatic compounds that enrich the wine with notes of vanilla, toasted wood, chestnut and so on, adding complexity to its flavour. At the end of this period, a selection is made from barrels containing wines of the desired quality. The wine is transferred to stainless steel tanks, where the final blend is prepared before the resulting product is poured into bottles.
